Salmon and Spring Vegetable Chowder

Serve with artisan rolls-

While I love a fresh piece of wild salmon either grilled or baked springtime seems the perfect season to chunk it up in a chowder and pair it with tender spring vegetables. This version is lighter than a typical chowder but hearty enough as a meal. All you’ll need is a hunk of artisan bread but a side salad would be a nice complement.

Poached Salmon with a Creamy Pea Sauce

Serve with Herbed Roasted Potatoes-

I have been serving this simple yet elegant salmon entree every Easter, as it is always requested and especially appreciated by the non-meat eaters. The cream sauce is light as the emphasis is on the meaty salmon and fresh seasonal spring vegetables. Include this on your Easter buffet or serve it with herbed roasted potatoes for a special springtime weeknight dinner.

Grilled Salmon Salad

Serve with watermelon slices, French bread-

This was a surprise hit, considering my family does not prefer salmon. My oldest declared that “this doesn’t even taste like salmon” as she went back for seconds. It is truly a keep-the-heat-out-of-the-kitchen recipe as the salmon is grilled and tossed with fresh, crisp ingredients. Cool watermelon slices and a loaf of good quality bread round out a new way to eat salmon in the summer.
