I am always testing Asian-inspired chicken recipes in the slow cooker but had yet to find one that stood out. I am a big fan of the podcast The Splendid Table with Lynn Rosetta-Casper. She also has great cookbooks and this recipe is adapted from a slow roasted chicken recipe found in her cookbook, The Splendid Table’s How to Eat Supper. It is very family-friendly receiving two thumbs up from my girls and I think the secret is taking some of the liquid and reducing it in a skillet as the sauce to be served with the chicken. I typically serve this with jasmine rice and steamed bok choy.
