This is one of those “out of necessity” dinners that I made when my kitchen was being renovated and I did not have a stove or oven. I couldn’t even access my grill which was right behind the staging area for the workers. It was spring and I knew I wanted to incorporate the juicy, sweet strawberries at their peak this time of year. I got carried away and used them in the salad dressing as well as in the salad. What a great experiment! It’s the strawberry version of the popular raspberry vinaigrette, so expect this salad to be on the sweet side.
